Easy and Delicious Meatloaf

Meatloaf, the down-home, old fashioned favorite, tops the list of best-loved American suppers.  It is a hearty main dish loved by all.  It is a family staple and is usually paired with a potato (mashed, smashed red or roasted) and a green vegetable.  Blueberries and strawberries mixed with yogurt and sprinkled with granola makes a delectable light dessert after the meal.  For the adults a rich and spicy red cabernet wine goes well with a meatloaf dinner.

Instructions
  1. Heat oven to 350 degrees. In 8x4 in. loaf pan, combine first 3 ingredients, mix well, will be moist. Press evenly in loaf pan.
  2. Combine three topping ingredients and spread over uncooked meatloaf. Bake for 45 minutes.
  3. Using two spatulas, lift meat loaf from pan to a serving plate (draining liquid.) Let set 5 minutes before serving.
Recipe Notes

If you are making this meatloaf for a large family with growing kids, try using two pounds of meat and increase the other ingredients.  Growing kids love this meatloaf and the leftovers make great sandwiches for dad.
